What You’ll Need

  • 2 medium sweet potatoes
  • 4 large eggs, beaten
  • 2 cup Parmesan, grated
  • 2 tablespoons FIREMASTER STAPLE
  • Parsley, garnish

Directions

  1. Preheat skillet lid on the Outpost Grill. This will help to create an “oven” effect once the skillet is on later.
  2. Wash and cut sweet potatoes into slices.
  3. Beat eggs in a medium bowl (large enough to dip potato wedges in for a later step) and set aside.
  4. In a similar size medium mixing bowl, mix together Parmesan and FIREMASTER STAPLE. Set aside.
  5. Dip each potato wedge in the beaten eggs, then dip in Parmesan mixture. Shake off excess seasoning mixture.
  6. Arrange potatoes in a single layer in the skillet. Cover skillet with preheated lid, and place on Outpost Grill to cook. Cook for 20 minutes or until the coating is golden brown.
  7. Remove from the fire, garnish with parsley, and serve.
