This recipe puts a delicious twist on the classic Argentinian choripan by using pizza dough as the base!

INGREDIENTS
Dough:
- 1 Whole Pizza Dough, quartered
- 1 cup All Purpose Flour
- ½ cup Cornmeal
- Olive Oil, as needed
Choripan:
- 3-4 Chorizo Sausage
- 9-10 Mozzarella Slices
- Mayonnaise (optional)
- Sliced Tomatoes (optional)
- Sliced Jalapenos (optional)
Chimichurri:
- ¾ cup Parsley, chopped
- ¼ cup Red Wine Vinegar
- 4-6 Garlic Cloves, minced
- 1 tbsp Red Chili Flakes
- Olive Oil, to desired consistency
- Salt, to taste
INSTRUCTIONS
Preheat the Oven: Set your pizza oven to preheat to 450-500°F (232-260°C).
Make the Chimichurri:
- In a bowl, combine all chimichurri ingredients: chopped parsley, red wine vinegar, minced garlic cloves, red chili flakes, olive oil, and salt to taste. Mix well and set aside for the flavors to meld.
Cook the Sausage:
- Add a cast iron skillet to the preheating oven.
- Once hot, add your chorizo sausage to the skillet and cook for 10-12 minutes, or until fully cooked through.
- Remove the cooked sausage from the skillet and keep it warm.
Prepare the Dough Rounds:
- Divide your pizza dough into four equal pieces.
- On a well-floured surface, stretch each dough piece into an 8-inch round.
- Drizzle olive oil over each flattened dough round.
- Top the dough with mozzarella cheese.
- Gently fold the dough in half, creating a semi-circle shape. Drizzle with additional olive oil if desired.
- Place the prepared dough rounds on a baking sheet or pizza stone and bake in the preheated oven for 10 minutes, or until the dough is golden brown and cooked through.
Serve and Enjoy!
- Remove the baked choripan pizzas from the oven.
- Slice up your cooked sausage and place it inside the "pocket" of each pizza.
- Drizzle generously with chimichurri sauce.
- Add your desired toppings like sliced jalapenos, tomatoes, and mayonnaise (optional).
